It is a sweet potato shochu with a direct sweet potato flavor, and is characterized by a very sharp taste.
We don't dare to blend with old sake to make the taste uniform. Therefore, the year of preparation (vintage) is indicated on the label. A pure sweet potato shochu that allows you to taste the sweet potatoes harvested that year.
Regular sweet potato shochu is made by sprinkling koji on steamed rice to make “ rice koji ” and then adding steamed sweet potatoes.
This "Imo Koji Imo" is a 100 % sweet potato shochu that dispels these traditional ways of making koji and does not use rice when making koji.
In recent years , 100 % potato shochu has been made by various breweries, but Kokubu Shuzo's imo koji potato was released in 1998 as the first 100 % potato shochu in the industry.
