Awamori is made using traditional direct-fire pot distillation.
Currently, distillation with boiler steam is the mainstream, but at Sefuku Shuzo, we apply direct fire to the pots and distill while carefully adjusting the heat of each pot. We are making awamori.
It has a strong flavor, a slight sweetness of rice, and a strong aroma.
The master brewers use traditional techniques handed down from their ancestors to create their products with meticulous training. Direct-fired Seifuku, created using current technology, is a very satisfying awamori that has both the aroma and richness of awamori.
