Kyoei-do 2022 Autumn Release Red
The wine uses Cabernet Sauvignon and Merlot harvested in the Kaminoyama region of Yamagata Prefecture, the Shiojiri region of Nagano Prefecture, and Katsunuma in Koshu City.
The Merlot undergoes almost entirely carbonic maceration, while the Cabernet Sauvignon undergoes low-temperature fermentation for around three weeks.
It took about 10 months for each of them to move from Otaru to Nakataru and Otaru and finish up.
A slightly dull pale red color.
The flavors of almond, hazelnut, butter, peach, rose, mulberry and jojo give off a fruity vibe.
The taste is reminiscent of hay and green broccoli, with a sweet and sour yogurt-like flavor.
The aftertaste has a spicy feel like cinnamon and orange peel, before returning to aromas like yogurt and chocolate.
It goes well with Chinese dishes such as stir-fried pork with green peppers, chili shrimp, and spring rolls, and especially with sweet Chinese sauces.
