・About Morohashi Sake Brewery
Nagaoka City, Niigata Prefecture, where our brewery is located, is located almost in the center of Niigata Prefecture, and due to its basin location, it is also one of the areas with the heaviest snowfall in Niigata Prefecture.
When the snow that accumulates on the mountains melts in the spring, it burrows deep into the soil and is purified, becoming clear water for brewing sake. ``Koshino Kagetora'' uses spring water from Mori no Mori, which has been selected as one of the 100 best waters in Japan, and water from a horizontal well dug on the grounds of the brewery.
All of these waters are soft water, which contributes to sake brewing that is dry but does not make you feel hot.
