With its fruity, refreshing acidity and sweetness, this is a new kind of sake that has never existed before, Kousumori .

This junmai daiginjo is the sweetest of the brewed forest series.
A sweet and fruity scent with a sourness reminiscent of Kyoho grapes and pineapple.
When you put it in your mouth, you can feel the umami and rich sweetness of the rice, but there is no impression that it is just sweet because the yogurt-like acid is working in the back.

It is sweeter when you drink it from a small sake cup, and you can enjoy its fruity aroma and bright sweetness when you drink it from a wine glass.
Chill well in the refrigerator before serving.

・ Brewing forest series
Normally, Japanese sake is made in a three- step process, where steamed rice, koji, and water are divided into three steps, but this brewing forest series is a one -step process that only takes one step .
Because it is squeezed at a very young stage, when the sugar is broken down into alcohol, it retains the mellow ginjo aroma and sweetness of the rice in the early stages, resulting in a fresh, refreshing and mellow sake.

We are also particular about raw unblended whiskey, and we use a bag squeeze instead of a press for squeezing.
By squeezing it out gently without applying pressure, you can minimize the unpleasant taste and create a fruity Japanese finish.
