Pure rice daiginjo brewed by hand without compromise

40% polished rice using 100% Koshitanrei from Niigata prefecture.
Like Kenshin, we use No. 9 yeast that maintains a pure and sincere attitude without seeking flashiness.

A junmai daiginjo with a mellow taste and a clear line that evokes a sense of luxury due to high polishing, and a sense of transparency while being rich.
Ikedaya Sake Brewery's true value is its medium-hard water, which has a strong aftertaste and a sharp taste.

It is not a gorgeous type with a ginjo aroma, but it is a junmai daiginjo that is suitable for eating with a gentle and beautiful taste.
