We use Miyamanishiki, which Kashi is good at, and reduce the unfavorable taste by setting a low amount of amino acids.

A balance of fruit-like sweetness and acidity, and a firm body with umami that does not make you feel low alcohol.
It is a sake with a sharp aftertaste made by the master brewer.
