Kanoya City, located on the Osumi Peninsula, is an area where sweet potatoes have long been cultivated on the well-drained Shirasu Plateau.
Taikai Brewery uses sweet potatoes carefully grown by contracted farmers in Kanoya City, where sweet potato cultivation is thriving, and makes shochu with special care.
When the shochu making process begins, the chief brewer and the kurabito stay in the brewery during the shochu making process. Rather than relying entirely on machines, we will continue to make shochu that is loved by as many people as a brand representing the Osumi Peninsula, with a focus on making shochu that makes the most of the five senses of the maker.
