Taikai Brewery uses sweet potatoes carefully grown by contracted farmers in Kanoya City, where sweet potato cultivation is thriving, and makes shochu with special care.
When the shochu making process begins, the chief brewer and the kurabito stay in the brewery during the shochu making process.
