・About Nishioka Sake Brewery
The company was founded in 1781 , in the middle of the Edo period, by the first generation Jinsuke Izutsuya in Kure, Nakatuchisamachi, Kochi Prefecture, located in the midwestern part of Kochi Prefecture.
A brewery with a history of over 239 years, currently reaching the ninth generation.
Underground spring water, Shimanto River's headwater famous water is used for preparation water. We use Yamada Nishiki rice as the raw material, and rice suitable for sake brewing that is naturally cultivated using traditional farming methods in the village at the headwaters of the Shimanto River.
In recent years, they have been focusing on ginjo sake brewing by their own toji, and have won awards in various competitions.
