・About Nishioka Sake Brewery
The company was founded in 1781 , in the middle of the Edo period, by the first generation Jinsuke Izutsuya in Kure, Nakatuchisamachi, Kochi Prefecture, located in the midwestern part of Kochi Prefecture.
This brewery has a history of over 239 years and is currently in its 9th generation.
We use underground spring water and famous water from the headwaters of the Shimanto River for the preparation water. We use Yamada Nishiki rice as the raw material, and rice suitable for sake brewing that is naturally cultivated using traditional farming methods in the village at the headwaters of the Shimanto River.
In recent years, the company has been focusing on producing ginjo sake by its own toji, and has won awards at various competitions.
