・About Nishioka Sake Brewery
The company was founded in 1781 by the founder Izutsuya Jinsuke in Kure, Nakadozamachi, Kochi Prefecture, located in the central-western part of Kochi Prefecture, during the mid-Edo period .
The brewery has a history of approximately 239 years and is currently in its ninth generation.
The brewing water used is underground spring water from the famous source of the Shimanto River. The raw rice used is Yamada Nishiki and other rice suitable for sake brewing that is naturally grown using traditional farming methods in the village at the source of the Shimanto River, and the brewery is particular about its sake brewing.
In recent years, the company has been focusing on brewing ginjo sake using its own master brewers, and has won awards in various competitions.
