A very luxurious Kijoshu type low-alcohol raw sake
This is a re-brewed ( kijoshu ) sake, using the brewery's special junmai hitogokochi sake in the brewing process of a yeast-free kimoto yeast .
The sweetness is reminiscent of ripe bananas, while the acidity from the kimoto yeast tightens the body.
It has a low alcohol content of 13 %, but it is not thin and has a nice rich flavor.
When we think of kijoshu, we tend to think of it as something that is recommended as an aperitif or dessert, but although Yukawa Sake Brewery's kijoshu is primarily sweet in taste, the acidity from the kimoto yeast gives it a firm finish, making it suitable for a wide range of tastes.
