This is a re-brewed sake ( Kijo-shu ) that uses this brewery's special pure rice Hitogokochi for the yeast-free kimoto .
The acidity derived from kimoto tightens the body in the sweetness reminiscent of ripe bananas.
Although it has a low alcohol content of 13 degrees, it is not thin and has a moderate richness.
Kijoshu is often recommended for appetizers and desserts, but Yukawa Sake Brewery's Kijoshu is mainly sweet, but the acidity derived from kimoto gives it a firm finish that can be enjoyed in a wide range of ways.
