The world's first Koshu wine made by Burgundians
This is a small-batch orange wine made in collaboration between Jojo, also known as Joris, a French oenologist who has been involved in making natural wines in Burgundy, Oregon, Chile, and New Zealand, and a long-established winery in Koshu City, Yamanashi Prefecture.
The harvest time is adjusted to make the most of the Koshu grape's beautiful acidity.
Koshu grapes, whose skins are more ripe, are harvested first, and the rest are harvested the following day.
The latter is made into juice and the former is macerated with whole bunches, cooled for about three days, then the temperature is raised to begin fermentation with wild yeasts.
A perfect balance of fruit, acidity and bitterness.
This is a dry orange wine that shows the careful craftsmanship that only a true artisan can produce.
