The grapes are harvested in three stages, one early and one at optimal ripeness.
The grapes are thoroughly cooled to 4°C, then destemmed and crushed, the juice is clarified for one day, and the supernatant is fermented at a low temperature in stainless steel tanks.
After fermentation is complete, we perform a blend of early harvesting and proper ripening, and paper filtration to complete the base wine.
It is aged for 24 months in the bottle, and 2% of Chardonnay from our own fields is added to compensate for the loss of disgorgement.
After dosage, it is aged in the cellar for an additional 6 months before release.
A pale yellow straw color with a sense of transparency, and lovely fine bubbles rise up.
Citrus aromas of grapefruit and lemon, and the freshness of green apple.
The spicy aroma of Japanese pepper and the aroma of biscuit and brioche from aging create accents and complexity.
