Mainly Koshu and Delaware, with additional Semillon and Roussanne used.
Koshu, Semillon and other grapes harvested in mid-September are pressed and fermented in barrels.
Koshu grapes harvested in mid-October are put into the tank with all the bunches, and then the barrel-fermented Koshu is added back in, with half of the grapes undergoing MC and the other half undergoing fermentation.
After three weeks it is pressed, transferred to barrels for fermentation and blended with Delaware that is harvested separately and fermented in barrels.
The wine is orange-golden in color, with notes of mugwort, melon, osmanthus, and honey in the background.
The flavor of tortoiseshell candy is stronger than usual.
The roughness of the sediment still remains on the tip of the tongue, but I'm looking forward to the honey-lemon flavors that will emerge from the Koshu citrus as it ages.
