Limited edition sake made using the rare rice variety "Hoshiakari"

"Hoshiakari" is a rare rice variety that is currently only used by a few breweries and is characterized by its sharp and delicate mouthfeel.
You can enjoy the subtle sweetness and lingering sourness that lies deep within the flavor.

The sake rice we use, "Hoshiakari," is a rice whose mother is the edible rice Hatsuhoshi and whose father is Miyamanishiki, the official rice used for sake brewing.
This project was born out of a romantic attempt by Tohoku Electric Power's Research and Development Center, rice farmers, and brewers to work together to develop sake rice suitable for the Tohoku region, and then have local sake breweries use this rice to create fine sake.

This is an extremely rare rice, with hard rice that is time-consuming to polish and difficult to control for water absorption, making it a challenge for sake brewers, and as a result, the number of people using it has not increased, and there are only a few farmers left cultivating it.
