No added antioxidants, unfiltered, fermented with wild yeast

It is made using 100% Muscat Bailey A from our own farm in Katsunuma, fermented with wild yeast without the addition of any antioxidants, and finished unfiltered.

Harvested on terraced farms in the Hishiyama/Toriidaira Hills area with a Brix of 17.5 to 18.
A small amount of sugar is added to balance the wine.
The temperature during fermentation is left to natural temperature, and the juice is pressed after 12 days of fermentation.
Aged for 6 months in stainless steel tanks.

This wine has a well-balanced strawberry aroma and a pleasant fresh acidity.
It goes well with stews with dashi stock, stews using soy sauce, and simply seasoned pork or chicken dishes.
