From the approximately 10 bottles of ``Special Junmai'' mash that can withstand long-term fermentation at low temperatures , we select one that is healthy and can withstand long-term fermentation at low temperatures, and slowly ferment it until the sake content of the unprocessed sake reaches around +13 .
It has a gentle aroma, a light and fine texture, and a sharp, smart taste, with just the right amount of thickness, and a soft, dry taste that is appealing. ``Rapid cooling'' after firing in tanks and ``storage in bottles'' results in a sake that is softer on the palate and has a nice aftertaste.
You can enjoy it without getting tired of drinking and with any food.
