From about 10 bottles of "special junmai" moromi, we select one that can withstand low-temperature long-term fermentation and slowly ferment it until the sake content reaches around +13 .
It has a gentle aroma, a light and delicate mouthfeel, and a soft, dry taste that makes you feel just the right amount of thickness while being crisp and toned. "Quenching" after heating in the tank and "bottle storage" for the entire amount make the sake softer in taste and sharper aftertaste.
You can enjoy it without choosing food without getting tired of drinking.
