Made with Yama Sauvignon (a hybrid of wild grapes and Cabernet Sauvignon) from Yamanashi Prefecture.
Dry yeast is added towards the end of the slow natural fermentation in stainless steel tanks.

Immediately after opening, it has a strong, pungent character, but also has the straightforward acidity of mountain grapes.
After a while the fruitiness will increase and the taste will become mellow, but we recommend drinking it as soon as possible.
