An enchanting white wine developed from the synergy of two wines

This blend combines Chardonnay grapes from two vintages, 2022 and 2023, harvested from our own vineyards in Makioka-cho.
Rather than vintage differences due to weather or grape ripeness, we combined two wines that underwent different fermentation processes.

The 2022 vintage was aged in new barrels with sulfites, while the 2023 vintage was fermented in stainless steel without sulfites.
While each could have been bottled individually, blending them created a "new" wine where both components evolved synergistically.

This is a well-balanced white wine with fresh fruit flavors and sweet aromas and nutty notes from the barrel.
