This is the limited autumn "Hiyaoroshi" version of the popular Tosa ultra-dry sake, "Senchu Hassaku." It is a raw Junmai sake that has been carefully aged at low temperatures until autumn, a release many look forward to each year.

The gorgeous, full-bodied aroma characteristic of Kumamoto yeast harmonizes with a clean, well-defined flavor. Thanks to moderate aging, it has a mellow mouthfeel while retaining that refreshing, crisp finish signature to ultra-dry sake.

Designed as the ultimate sake for pairing with food, it enhances the natural deliciousness of ingredients. It is exceptional with seasonal fatty skipjack tuna or yellowtail sashimi, as well as tempura made with autumn eggplant or mushrooms. It also pairs well with tomato-based Italian dishes—try it with a chicken and tomato stew made with autumn ingredients.
