This is an excellent soba shochu that has been aged for 8 years.

A few years ago, I was traveling with two friends and had the good fortune to stay at a small temple.
For dinner, the elderly monk who was the head of the temple treated us to some delicious soba and shochu.
It was a masterpiece that had reached the height of maturity and exuded a subtle sense of wabi-sabi.
Now I miss the old monk Shochu and contacted him, but I was told that the temple is no longer there.
I had a drink with that friend the other day, and it seems he too had been strangely impressed by it.
By the way, we call that monk Soba Osho.
