Made with 100% Pinot Noir from our own vineyards in the Iwade region of Yamanashi City.
Due to the harsh climate, only one and a half barrels are produced, making it an extremely small quantity.
After complete destemming, cold maceration is carried out and this is the only wine to be fermented using wild yeasts.
After alcoholic fermentation, the wine underwent spontaneously induced malolactic fermentation, followed by 9 months of ageing in French oak barrels.
The wine is racked once in the spring and bottled unfiltered in the summer.
Pale orange hue.
The scent has a soft, sweet aroma of roasted chestnuts, kumquats, dried persimmons and loquat leaves, with a dry green note.
In the mouth, the fruitiness reminiscent of hawthorn and fig develops with the gentle tannins of high-quality tea.
Although it has a pale color and a light taste, it has a subtle, long-lasting flavor that goes well with Japanese soup stock.
We also recommend dishes that use fresh fruit, such as Kamo Nanban, Akashiyaki, and Dashimaki, which are light red wines. In a large glass, it also goes well with grilled duck, aged sushi, and cheese with truffles.
