Junmai Ginjo sake is the first product that Suigei Sake Brewery started producing and is still the representative sake of the brewery!
Ginpu, a rice from Hokkaido suitable for sake brewing, is polished to 50 % and brewed in small quantities at low temperatures.
The umami of the ingredients is combined with Suigei's unique sourness to fully bring out the five tastes, resulting in a drink with a wide range of flavors but with a sharp finish.
This is a Junmai Ginjo sake with a subtle aroma that you won't get tired of drinking.
・About sake rice “Ginpu”
It was tested with the strain number "Soraiku No. 158 " and was registered as a variety in 2000, and is the only one produced in Hokkaido . The second rice suitable for sake brewing.
This is the variety that led to the spread of sake brewing using Hokkaido rice as the raw material, and is a type of rice with a large and distinct shinpaku, and a high rate of shinpaku expression.
Sake brewed using Ginpu tends to have a richer flavor.
The name ``Ginpu'' was inspired by the rice used to make ginjo sake.
