The red wine barrels used to age Merlot at Shinshu Takayama Winery in Nagano Prefecture were sent to Suigei Brewery in Kochi Prefecture, where sake was added and aged for 82 days .
In order to express the aroma of red wine and oak, we use a plain Junmai Ginjo that has little taste.

Pale yellow with a slight pink tinge.
The sharp aroma reminiscent of melon and pear derived from Japanese sake is elegantly fused with the cherry and vanilla scent derived from red wine.

It is soft and light on the palate, and has a smart taste without any unpleasantness.
This is a great dish that goes well with light-flavored appetizers, whether Japanese or Western.
