・Excerpt from the Fuji Takasago Sake Brewery official website Our brewery is located just west of Fujinomiya Sengen Taisha, the head temple of Japan.
The origin of our brewery is said to have been founded by Masakichi Yamanaka in Hino-cho, Gamo-gun, Shiga Prefecture around 1820 (Bunsei era). I heard that he was born in the 20th grade of Tenpo.
The characteristics of the brewery are that it has a softer and slightly sweeter taste than the Fuji no Mizu (soft water) of the brewing water, and the taste is made by successive generations of "Noto Toji" such as "Yamahai-shikomi" and "Sai-shikomi".
The overall structure is about 2,500 koku (about 250,000 1.8 liter bottles), and one third of the rice used is Yamada Nishiki from Hyogo Prefecture, Miyama Nishiki from Kita Nagano, and Gohyakumangoku from Hokuriku. . Approximately 75%, including Jousen, is made with a specific name.
