It is a commonly accepted theory in brewing science that sake yeast weakens and dies when the alcohol content exceeds 18 %. However, Kinoshita Sake Brewery brews sake with an alcohol content of 20 % or more using naturally brewed junmai whiskey every year .

More! Once a year, this " white label version " tests the limit of the fermentation power of the yeast that lives in the brewery .
