The untouched genshu series is a limited edition series that is released in different types of sake rice, where you can enjoy the carbon dioxide gas generated during the main fermentation by hand-filling the sake directly at the exit of the squeezer and then capping it at that moment.
No pressure is applied during squeezing, and the high-quality sake flows naturally and is bottled as is, without any filtration, water addition, or pasteurization.

This sake is made using sake rice called ``Shukumai,'' which has been cultivated in Kyoto since ancient times.
It has a gentle aroma, softness, and gentle taste, but the carbonic acid gives it a refreshing punch.
