Since its founding, Tatsusen Sake Brewery has avoided mass production and mass sales methods in the blessed environment of Aizu, and has striven to carefully brew sake that takes advantage of the quality of handcrafted sake.
We are working on sake brewing by growing high-quality rice together with local farmers, including the resurrection of the legendary rice suitable for sake brewing, ``Kyo no Hana.' '
We use clean well water that comes from our basement .
Preparation (sake brewing) is limited to the coldest season of the year (when the air is clean) from November to March , and each bottle is carefully prepared in small batches.
