By adding Tengumai's original brew to the traditional sake base, it creates a harmonious balance of rich flavor and acidity.
Rather than a sour acid, the acid harmonizes with the umami flavor to tighten the whole dish and create a sharp aftertaste, making it a good match with strong-flavored autumn ingredients and fatty grilled fish.
