In order to express the natural climate and terroir of Togakushi, this limited edition product is made using "brewing water from the Togakushi water system and spring water near Togakushi Shrine's Hokosha Shrine," and is " a traditionally brewed pure rice ginjo with a modern and gorgeous aroma " that has been bottled.
The yeast starter used is Junmai Daiginjo ( polished rice ratio 35 % ) , and some of the brewing water is sourced from Togakushi Shrine.
It is fresh and extremely elegant, like a raw sake. It has a gorgeous aroma and a light, smooth taste. It is a fine sake.
