This is a Kimoto Junmai Sake designed and brewed mainly by the Miyama Nishiki brewer of Tsukinowa Sake Brewery.
You can feel the sourness and rich taste derived from kimoto, but it is a sharp and deep type.
It goes well with strongly seasoned dishes, and is perfect for hot sake.
○ From Tsukinowa Sake Brewery official website The first generation of the Yokozawa family, who was born in Wakasa (now Fukui Prefecture), ran a koji shop in the current location. 1886 is the beginning of the history of Moon Ring.
Since generations of family heads have been involved in sake brewing, since 1991, Taizo Yokozawa, the current brewer (7th generation of the Yokozawa family), has taken command of sake brewing as owner and chief brewer.
At the time of incorporation on November 1, 2005, Yuko Yokozawa became the chief brewer and is brewing sake under a new system.
