"W," the exclusive off-menu brand shaking up the sake industry
The "W Series" by Watanabe Sake Brewery is a limited-quantity, made-to-order product brewed specifically for a select group of sake retailers who are shaping the future of the industry.
The "W" in the brand name represents three concepts: Watanabe (the brewery), World, and Warai (laughter).
The sake rice used is "Misato Nishiki," a rare variety born from a cross between Yamada Nishiki and Miyama Nishiki.
Developed with the goal of growing high-quality sake rice even in cold northern regions, this variety is difficult to cultivate but possesses excellent characteristics for brewing.
The finish is exceptionally pleasant, with a gentle, spreading flavor accompanied by a smooth, peach-like aroma.
It features a soft, airy mouthfeel based on the natural sweetness derived from the rice.
While the "W Series" meets the standards for Junmai Daiginjo by polishing the rice down to 50%, it is labeled simply as Junmai.
This is because the brewery does not believe that polishing rice to extremes or playing with numbers gets them closer to the true essence the W Series aims to achieve.
