Watanabe Sake Brewery's "W Series" is a limited edition, made-to-order product brewed for select liquor stores that represent the future of Japanese sake.
The "W" in the brand name stands for three things: Watanabe Sake Brewery (Watanabe), World (World), and Laughter (Warai).
Watanabe Sake Brewery's W is great at bringing out the characteristics of rice!
This is the W series, and this time we will be picking out "Omachi," a variety that continues to fascinate sake fans.
Among the Omachi varieties, the one with the longest history is "Takashima Omachi" in the Takashima district of Okayama Prefecture.
This luxurious sake rice is used, and it is the only one in the series to be brewed using the kimoto method.
W Takashima Omachi has a faint aroma reminiscent of muscat and apples.
It has a gentle, inclusive taste with gentle ups and downs in flavor, and the acidity and richness unique to kimoto yeast are thoroughly blended into it.

The "W Series" is a Junmai Daiginjo standard sake made from rice polished down to 50%, but is still labeled as Junmai sake.
This is because we believe that polishing the rice to a smaller size or tinkering with numbers will not bring us any closer to the essence of what the W Series is aiming for.
