A thick plum wine made in a Yamagata brewery with plenty of fruit pulp

The base of this plum wine is Yamagata Masamune Junmai Sake and Junmai Ginjo Sake.
The rich texture of the plum pulp and the elegance of the sake brewing process combine to give you a full plum flavor with a clean aftertaste.

The balance of the umami, sourness, and sweetness of the plum is excellent and refreshing.
The sweetness spreads through the sourness, and the plum flavor lingers until the very end.
It is also recommended as a dessert plum wine, whether poured over vanilla ice cream or used as a sauce for yogurt.

This plum wine was started belatedly, several years after the plum wine boom.
Originally, my father loved plum wine and made it in the Mitobe household, but one of the reasons we started making it was that the plum wine we made at home was much tastier than the commercially available plum wine.
Being a latecomer, we aim to make plum wine that is orthodox, without trying to be eccentric, and is based on sake, so please come and experience the deliciousness of plum wine made with sake.
In addition to comparing different varieties of plums and their ripeness, we have experimented with everything from the flavor of the sake used and the type of sugar, to the pickling method and timing of the work.
Of course, there are many differences between the production of plum wine and the brewing of sake, but it also has its own interesting aspects.
