・About Sasaichi Brewery
Located in Otsuki City, Yamanashi Prefecture, Sasaichi Brewery was founded in 1661 as Hanadaya.
Amano Hisashi, who later inherited Hanadaya and became the first kuramoto (brewery owner), renamed it to the current Sasaichi Brewery in 1919, boasting a history of over three hundred years.
The brewing water used is underground water originating from the sacred Mt. Fuji, which flows to the brewery's location. This water was chosen by Emperor Meiji to be carried with him during his journey from Tokyo to Kyoto in the Meiji era and is known as "Gozenmizu" (Imperial Water).
The brewery places the utmost importance on its relationship with food, and instead of emphasizing strong individuality, it determines the flavor based on its vision of sake as a beverage.
