Already a hot topic among trend-conscious sake lovers, "Joso Mori" is a new type of sake with a fruity flavor, refreshing acidity and sweetness that has never been seen before, and has been rebranded as "Yuki no Mayu."

This Junmai Daiginjo is the sweetest type of sake in the "Yuki no Mayu" series.
A sweet and fruity aroma with a hint of acidity reminiscent of Kyoho grapes and pineapple.
When you put it in your mouth, you can taste the umami of the rice and its rich sweetness, but there is also a slight yogurt-like acidity in the background, so it doesn't just seem sweet.

It tastes sweeter when served in a sake cup, and when served in a wine glass you can enjoy the fruity aroma and bright sweetness.

・"Yuki's Eyebrows" series
Normally, sake is brewed in a three- stage process, with steamed rice, koji, and water being brewed three times , but this Joso Mori series is brewed in a single stage, with all that process done in one go .
Because it is pressed at a very young stage, when the sugar is still being broken down into alcohol, it produces a fresh, refreshing and mellow sake that retains the rich ginjo aroma and sweetness of the rice that comes out early on.

They are also particular about producing raw sake, and use a bag press instead of a compressor.
By gently squeezing without applying pressure, impurities are kept to a minimum, resulting in a Japanese product that offers a more fruity flavor.
