Yamahai Junmai that complements various dishes
The initial aroma is subtle, a butteryscotch-like scent combining fruity notes reminiscent of white peach and banana with grains, lactic acid, and a hint of caramel.
The initial taste is light and sharp. As a new sake, the sweetness is subdued when freshly opened, and the acidity and minerality are more pronounced.
As the temperature rises or it's exposed to air, the volume increases, leading to a more balanced flavor.
With a lighter body than usual this year, we look forward to how the flavors will develop!
It pairs well with rich umami dishes such as buri daikon (yellowtail and daikon radish), oysters, and hobamiso (miso grilled on a magnolia leaf).
Enjoy it at a wide range of temperatures, from chilled to warmed.
