Two years after the Noto Peninsula Earthquake, as recovery efforts are still underway, Fukumitsuya in Kanazawa City, Ishikawa Prefecture, and Tsuruno Shuzoten in Noto Town, which suffered total destruction, have once again joined forces to realize a limited-quantity collaborative brewing project this year.
Using yeast salvaged from the collapsed brewery, both sake breweries worked together to brew "Tanizumi," and by carefully blending it 1:1 with "Kaga Tobi," which has a gorgeous aroma derived from flower yeast, the result is a sake with a light mouthfeel and a satisfying finish.
This sake, born from the intertwining of the path to recovery and the craftsmanship of the brewers, is not just a Japanese sake; it is a cup that reflects the aspirations and future of the region, quietly resonating in the hearts of those who drink it.
