This is the third red wine released by Kounosuke Yoshihara, the brewer behind "AIJOU KOUBOU."
Made using Muscat Bailey A grapes grown by Mr. Suzuki in Kaminoyama City, Yamagata Prefecture, and carefully brewed through natural fermentation with wild yeasts.
The grapes were gently aged for 55 days in contact with their skins, with minimal pigeage, to extract their inherent aroma and texture.
Upon opening, there is a subtle effervescence, and the soft mouthfeel reveals fruity notes reminiscent of mulberries and prunes.
Subtle hints of spices, reminiscent of star anise and five-spice powder, intertwine, creating a light yet robust finish.
"Magnolia" (Mokuren) — like a flower that quietly continues to bloom, this red wine unpretentiously expresses the true character of the grape.
It pairs well with dishes that have acidity and umami, such as tomato sauce dishes, sweet and sour pork, fried eggplant marinated in dashi, and braised pork belly.
Enjoying it slowly at 15–20℃ will reveal even richer nuances.
The optimal drinking period is now until 2030, and after opening, you can enjoy changes in its flavor for about 10 days.
