Through extended sur lie aging, Cohime has a slightly deeper color and a dry taste.

Sakai Winery, established in 1892, is the oldest winery in the Tohoku region.
Around 2007, they switched from conventional farming to pesticide-free grape cultivation in their own vineyards, where about 20 sheep graze to manage weeds.
They produce wine using natural yeasts and microorganisms present in the soil, and maintain traditional methods, such as their non-filter production method, which they've used since their founding, to create terroir-driven wines.
