All of these items are super limited editions, brewed in very small batches of just 400kg total rice.
The sixth-generation heir, Masayuki Yamazaki, 23, who trained at Tenryohai Brewery, which brews Gakudai, has joined the brewing team, further improving the quality of the sake.
This is a brewery on the rise, gaining significant attention.
This first new sake of the season is a slightly effervescent origarami nama sake made with "Aichi no Kaori" rice from Aichi Prefecture.
It has a white, fruity aroma reminiscent of peeled pears, lychees, green bananas, and white grapes.
The refreshing, crisp, and clean aroma that spreads with an impressive upward fragrance is noteworthy.
A pleasant effervescence, silky notes from the lees, and a natural, gentle umami spread with the bubbles.
As always, the balance of effervescence and sweetness, combined with a perfectly balanced alcohol content, makes it incredibly easy to drink.
