This sake is made using 100% lower-grade rice developed for daiginjo sake, and is polished to 50% to achieve Junmai Daiginjo specifications.
It's frustrating that just because it uses inferior rice, it cannot be called Junmai Daiginjo and is treated as regular sake.
However, Higashi no Fumoto Sake Brewery took advantage of this and created this sake from their strong desire to "deliver delicious, cost-effective sake to their fans."

・Eieiissui is a phrase from the Tanabata legend about Princess Orihime and Princess Hikoboshi, who are placed on a river overflowing with water. The phrase expresses the sadness of being separated by the Milky Way and unable to talk to each other, even just by looking at each other. It also expresses the frustration of not being able to call the sake Junmai Daiginjo.
