Aoki Shuzo is a sake brewery located in Uonuma, Niigata Prefecture, one of Japan's leading heavy snowfall regions. Since its establishment in 1717, sake brewing has continued without interruption for over 300 years. Aoki Shuzo's sake, typified by "Kakurei," is born from the various blessings of the snowy country and the traditional techniques of the Echigo Toji (master brewers). In a region where many Niigata sakes are "light and dry" (tanrei karakuchi), we aim to brew "light and umami-rich" (tanrei umakuchi) sake that retains the inherent deliciousness of the sake rice, and we intend to pass on that flavor for the next 100 years.
