[Minami x Cave D'Occhi Winery FUSION 2022 Deep & Silent]

Limited release of 295 bottles! A dry manly sake!!

Wine barrels that had been used to age red wine ( made with Cabernet Sauvignon ) at Caved'Occhi Winery in Niigata Prefecture were sent to Minami Sake Brewery, which brews the famous sake " Minami " in Kochi Prefecture, where they were filled with Junmai Daiginjo sake made with Hattannishiki and aged for 205 days.

Pale yellow with a hint of pink.
The aroma is gentle, deep and quiet, with notes of ripe pine, pear and raisins, and more like dead wood than the sweet scent of oak.

It has a mild mouthfeel, a crisp impression reminiscent of minerals and stones, and a rich, umami flavor.
It gives the impression of a dry, quiet, manly drink, characterized by the smoothness that comes from the casks and the strong acidity that appears towards the end.
