・About Sasai Brewery
Located in Otsuki City, Yamanashi Prefecture, founded in 1661 (Kanbun 1) as Hanadaya.
Amano Hisashi, who later inherited Hanadaya and became the first brewery owner, renamed it Sasai Brewery in 1919, giving it a history of over 300 years.
The brewing water used is groundwater flowing from the sacred Mt. Fuji at the brewery's location. This water was chosen by Emperor Meiji to be carried with him when he traveled from Tokyo to Kyoto, and is called "Gozenmizu" (Imperial Water).
The brewery places great importance on its relationship with food, and instead of emphasizing individuality, it determines its flavors with sake as a beverage in mind.
