A rare sweet potato shochu made with roasted sweet potato powder!

This unusual sweet potato shochu was created after the brewery interacted with a sweet potato processor, and is made using roasted sweet potato powder.

When we visited the factory of a sweet potato processing company, we saw that various varieties of sweet potatoes, such as Annou sweet potato, Beni Haruka, Silk Sweet, and Purple sweet potato, were being baked.They were sold as baked sweet potatoes as they were, and also crushed and processed into baked sweet potato powder.

During the crushing process, the potatoes are passed through a fine mesh sieve, but the potatoes that remain are either discarded or used as animal feed.

The roasted sweet potato powder that remains after sifting is also made from fine sweet potatoes.
This sweet potato shochu was born from a flash of inspiration: could shochu be made from this?

The layered sweet aroma and flavor comes from the roasted sweet potato powder, which is made by powdering seven types of sweet potatoes.
By using yellow koji, which is mainly used in brewing sake, the ginjo aroma complements these.

The word "roasted sweet potato" might conjure up an image of a roasted aroma, but this preparation does not have a particularly distinctive roasted aroma.
Instead, you can enjoy the sweet aroma and taste of steamed sweet potatoes made from a variety of sweet potatoes.

Enjoy it slowly on the rocks or with water.

*Due to raw material procurement issues, some regular Beni Haruka sweet potatoes are also used.
