This limited edition shochu is made from rice koji produced with early-harvest new rice from the Osumi Peninsula in Kagoshima Prefecture, and then brewed with freshly dug, contract-grown sweet potatoes, finished with coarse filtration.
By blending the same raw materials and aging the原酒 (genshu) in ceramic pots, this Imo Shochu achieves a sweetness and deep richness imparted by the black koji. Despite being coarsely filtered, it has no off-flavors, offering a pleasant and lingering aroma and taste.
