【GRAPEREPUBLIC Bailey A 2021】

A refined red wine overflowing with juicy fruit flavor

This wine uses 95% Muscat Bailey A from Yamanashi Prefecture and 5% Cabernet Sauvignon from Yamagata Prefecture.

20% of the Muscat Bailey A was placed as whole bunches at the bottom of the tank, and the remaining 80% was destemmed and placed on top of the whole bunches, undergoing carbonic maceration at the bottom. After 10 days of skin contact, it was pressed.
A small amount of Cabernet Sauvignon was blended in the summer of 2022 before bottling. It was aged in stainless steel tanks for approximately 10 months.

The aroma is juicy and fruity, like a combination of freshly cut apples and strawberries. The flavor is also full of fruit, with a pleasant acidity and soft tannins, followed by a lingering yeast-like umami finish.

*What is carbonic maceration? It is a winemaking method where whole grapes are fermented in a tank with carbon dioxide. It is characterized by fresh aromas and a deep color with low astringency.
