50% polished rice using Yamada Nishiki rice.
It has a fresh ginjo aroma that is typical of new sake, and when you put it in your mouth, it has a rich flavor and refined, soft sweetness typical of Yamada Nishiki.
There is also a beautiful acid that tightens the taste, and the aftertaste is well organized.
