Fresh acidity and voluminous fruitiness

This is Domaine Toi's second red wine release.
It was prepared with a maceration period of 18 days, with the immersion period determined by considering the tannins derived from the seeds.

To bring out the natural aromas of the grapes, it was aged for 10 months in old barrels.
The aroma is primarily of red fruits (redcurrant, raspberry, plum), with nuances of flowers and spices like violet, clove, and sandalwood.
The taste offers fresh acidity, voluminous fruitiness, and delicate tannins, blending together for a pleasant and long finish.

Domaine Toi leverages Hokkaido's cool climate, practicing cultivation without relying on pesticides or chemical fertilizers.
They practice natural winemaking that respects the inherent power of the grapes, such as spontaneous fermentation with wild yeast and minimal use of sulfites.
It is a small winery that honestly reflects the characteristics of the land and the expression of each vintage.
